"Beatriu de Pinós" scholarships for two post-doctoral positions in Food technologies

The Centre for Research, Innovation and Transfer of Food Technologies at the Autonomous University of Barcelona (UAB) has two open positions for post-doctoral researchers, the Beautriu de Pinós Fellowships. The area of the project to work at is Biological Sciences and Production technologies, more specifically: Bioactive emulsifiers functionalized by ultra-high pressure homogenisation (UHPH) for microencapsulation of vegetable oils. Application to dairy-based products. This project aims to investigate the concentrated emulsions obtained by UHPH technology, using ingredients from the buttermilk with variable composition of MFGM components (proteins / phospholipids), together with vegetable oils rich in omega-3 fatty acids. Thus, improved protection systems (against oxidation) and release of bioactive components are expected to be available over conventional homogenization.
